Greetings from the Farm Team,Early July is the time of year to clean the spring vegetable beds and plant them to a cover crop and start harvesting the summer vegetables associated with a Virginia garden – think tomatoes, peppers, eggplant, cucumbers, summer squash, onions, and garlic. The regular activities on the Farm shift from being dominated by planting and weeding to harvesting, mowing, and weeding. The Farm has a great looking stand of these summer vegetables that we will complement with seasonal fruit, such as the peaches and cherries in this cycle, from Beechwood Orchards.
The cherry tomatoes are always a highlight with the Farm campers and look to be productive again this season. The first week of harvest is always a bit lighter than subsequent weeks, so look for larger shares of cherry tomatoes as the season progresses. We are also growing small eggplant varieties this year called Fairy Tale. They are especially good for frying, with no need to peel or salt and can be simply cut in half and fried or grilled in a matter of minutes.
Farm Stand at the Boat House! Thursday, July 14 from 4 – 6 PM the Farm Stand is visiting the Boat House! Onsite will be a variety of Farm products along with sweet treats, partner products, a food truck, and a cooking demo geared at kids.
