Farmer Andrew's Kale Salad
Ingredients
- 1 Bunch Kale
- 1 tbsp Red Miso
- 1 tbsp Tahini
- 1 tbsp Plum Vinegar
- 1 tsp Honey Add more for extra sweetness!
- Toasted Nuts
- Raisins/Craisins
Instructions
- Remove kale leaf ribs and chop into 1/2 strips across the leaf1
- Mix the miso, tahini, vinegar, and honey until creamy
- In a large bowl, massage the kale leaves by hand with the mixture until the leaves are evenly coated -- your hands will be sticky, but it washes off easily with soap.
- Place bowl in the refrigerator for approximately 30 minutes, top with your choice of toasted nuts and dried fruit, then serve.
