Remove kale leaf ribs and chop into 1/2 strips across the leaf1
Mix the miso, tahini, vinegar, and honey until creamy
In a large bowl, massage the kale leaves by hand with the mixture until the leaves are evenly coated -- your hands will be sticky, but it washes off easily with soap.
Place bowl in the refrigerator for approximately 30 minutes, top with your choice of toasted nuts and dried fruit, then serve.
