This simple side dish gets its deep satisfying flavor from fresh potatoes and good quality olive oil. It’s is delicious warm or at room temperature. We like to toss the potatoes with colorful garnishes, like red peppers and green herbs.
1 pound potatoes, steamed
1 teaspoon kosher salt
freshly ground black pepper to taste
3 tablespoons olive oil
1 tablespoon diced red pepper
1 tablespoon diced red onions or shallots
1 teaspoon chopped chives or parsley
- Cut the potatoes into 1/4-inch slices while they are still warm and place them in a mixing bowl.
- Sprinkle the potatoes liberally with salt, pepper and olive oil. Toss to combine.
- Garnish with red pepper, onion or shallot and herbs. Serve or refrigerate for up to 3 days. Bring to room temperature before serving.
