Sautéed Zucchini with Onions, Cherry Tomatoes and Parmesan

Tender zucchini blends beautifully with other summer vegetables from the garden. This Italian-inspired dish is quick, easy and tasty. Serve it alongside grilled meats like sausage, chicken and burgers. Serves 4.


2 tablespoons unsalted butter
1/2 onion, diced
2 medium zucchini, halved lengthwise and sliced 1/3 –inch thick
1 cup cherry tomatoes
salt and black pepper to taste
1/4 cup freshly grated Parmesan cheese

  1. Melt 2 tablespoons of butter in a skillet over medium heat. Add the onion and cook until softened.
  2. Add the zucchini and sauté until just tender. Add the cherry tomatoes and cook for another minute to warm them.
  3. Season with salt and pepper. Garnish with Parmesan cheese and serve.
