Romesco

This sauce has a delicious nutty, sweet, smoky flavor that goes with just about anything. Serve with grilled veggies, chicken, lamb or beef. It also freezes beautifully. Makes about 1 cup.

Ingredients

3 large red peppers
1 clove garlic
1/2 cup toasted, slivered almonds
2 tablespoons parsley leaves
1/4 cup tomato puree
2 tablespoons sherry vinegar
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper, or to taste
1/2 cup olive oil
Salt and fresh ground pepper, to taste

Instructions
  1. Grill the peppers until lightly charred all over. Remove the stems and seeds.
    Place the peppers, garlic, almonds and parsley in a food processor and process until pureed.
  2. Add the remaining ingredients and process until combined.
