Raw Zucchini and Tomato Salad

If you think you’re not a fan of summer squash, this fresh tasting salad will make you think again. It’s easy to overcook summer squash and end up with a mushy mess. Try it raw, you’ll appreciate the refreshing crunch on a hot summer day. Serves 4.

1/4 cup thinly sliced red onion
2 tablespoons white wine vinegar
1/4 teaspoon sugar
1/4 teaspoon salt
2 small zucchini squash
1 cup cherry tomatoes
5 large basil leaves, cut into thin strips
2 tablespoons extra virgin olive oil
freshly ground black pepper

  1. Combine the onion, vinegar, sugar and salt in a large mixing bowl.  Set aside.
  2. Cut the zucchini into 3-inch lengths.  Using a mandolin or sharp knife, slice the zucchini lengthwise into thin strips.
  3. Toss the strips of zucchini, tomatoes, basil and olive oil with the onion mixture.  Season with pepper.
