The tangy taste of fresh Cherry Glen goat cheese is the perfect match for the season’s sweet strawberries. Splashed with Lemon Vinaigrette, this salad is wonderfully refreshing. Turn it into a meal by topping it off with grilled chicken or shrimp. Serves 4.
6 cups salad greens
2 to 4 tablespoons Lemon Vinaigrette
1/2 cup crumbled, fresh goat cheese
1 cup sliced strawberries
- Place the greens in a very large bowl. Add 2 tablespoons of Lemon Vinaigrette and gently toss with tongs. Add more dressing if desired.
- Divide the greens among salad plates. Garnish with goat cheese and strawberries.
For the Lemon Vinaigrette
1 tablespoon plain yogurt
1/2 teaspoon lemon zest
1 tablespoon fresh lemon juice
Pinch each of salt, pepper and sugar
3 tablespoons of extra virgin olive oil
1 teaspoon chopped fresh mint, optional
- Whisk the yogurt, lemon zest and juice, salt, pepper and sugar together in a large bowl.
- Slowly whisk in the oil. Stir in the mint.
