Mixed Green Salad with Goat Cheese, Strawberries and Lemon Vinaigrette

The tangy taste of fresh Cherry Glen goat cheese is the perfect match for the season’s sweet strawberries. Splashed with Lemon Vinaigrette, this salad is wonderfully refreshing. Turn it into a meal by topping it off with grilled chicken or shrimp. Serves 4.

6 cups salad greens
2 to 4 tablespoons Lemon Vinaigrette
1/2 cup crumbled, fresh goat cheese
1 cup sliced strawberries

  1. Place the greens in a very large bowl.  Add 2 tablespoons of Lemon Vinaigrette and gently toss with tongs.  Add more dressing if desired.
  2. Divide the greens among salad plates.  Garnish with goat cheese and strawberries.

For the Lemon Vinaigrette


1 tablespoon plain yogurt
1/2 teaspoon lemon zest
1 tablespoon fresh lemon juice
Pinch each of salt, pepper and sugar
3 tablespoons of extra virgin olive oil
1 teaspoon chopped fresh mint, optional

  1. Whisk the yogurt, lemon zest and juice, salt, pepper and sugar together in a large bowl.
  2. Slowly whisk in the oil. Stir in the mint.
