This salsa adds a burst of fresh summer flavor to simply grilled chicken or fish. Makes about 1 cup.
1 cup chopped melon, cut into 1/2-inch cubes
1 tablespoon diced scallions
1 teaspoon, or to taste, finely diced jalapeno
1 tablespoon fresh lime juice
1 teaspoon finely chopped mint leaves
salt and pepper to taste
