Mashed potatoes are delicious, especially this time of year when they’re fresh and it’s starting to get cold outside. Try using Daikon instead of potato, or in addition to, for added flavor, texture and nutrients.
4 large daikons
- Chop the radishes into 1/2-in pieces and boil until soft in a pot with a pinch of salt.
- Drain and mash with a fork or masher until desired consistency.
- Add a tablespoon of butter, and milk (as desired). Finish with salt and pepper.
Try them with: Greek yogurt, cheese, almond milk, hot sauce or herbs to add additional flavor.
