Classic Vinaigrette

Makes 1/4 cup.


1 tablespoon Dijon mustard
1 tablespoon vinegar
aromatics (garlic, shallots, herbs), optional to taste
salt, pepper and sugar
3 tablespoons oil, more or less to taste

  1. Whisk the Dijon mustard, vinegar, aromatics, salt, pepper and sugar together in a bowl.
  2. Slowly whisk in the oil.
  3. Adjust salt and pepper to taste.

Sherry Vinaigrette: Use sherry vinegar.

Balsamic Vinaigrette: Use balsamic vinegar with garlic, shallots and olive oil. Omit the sugar.

Asian Vinaigrette: Use a combination of rice vinegar and soy sauce for the vinegar, ginger and garlic for the aromatics, and vegetable oil and a dash of sesame oil.

Citrus Vinaigrette: Use sour cream or yogurt instead of Dijon. Use zest and juice from lemon, orange and/or lime for the vinegar, shallots and some form of chili pepper for the aromatics and vegetable oil.
