Arugula Salad with Goat Cheese, Strawberries and Lemon Vinaigrette

The peppery taste of arugula makes it a perfect match with mild, fresh goat cheese and sweet strawberries. Splashed with Lemon Vinaigrette, this salad is wonderfully refreshing. Turn it into a meal by topping it off with grilled chicken or shrimp. Serves 4.


6 cups arugula
2 to 4 tablespoons Lemon Vinaigrette
1/2 cup crumbled, fresh goat cheese
1 cup sliced strawberries

  1. Place the arugula in a very large bowl. Add 2 tablespoons of Lemon Vinaigrette and gently toss with tongs. Add more dressing if desired.
  2. Divide the greens among salad plates. Garnish with goat cheese and strawberries.

Lemon Vinaigrette


1 tablespoon plain yogurt
½ teaspoon lemon zest
1 tablespoon fresh lemon juice
Pinch each of salt, pepper and sugar
3 tablespoons of extra virgin olive oil
1 teaspoon chopped fresh mint, optional

  1. Whisk the yogurt, lemon zest and juice, salt, pepper and sugar together in a large bowl
  2. Slowly whisk in the oil. Stir in the mint.
