Dear CSA Members,
This week at the Farm we are thoroughly enjoying the delightful fall weather and so happy to share with you some cooler season crops. Introducing the next super green – Broccoli Leaves! Broccoli greens are delicious, nutritious, and have all the major health benefits of broccoli. Broccoli is a close relative to Kale and Collard Greens, so the greens look quite similar, but this veggie offers 100% of your daily dose of Vitamin C and Calcium per serving! I find that broccoli greens are more tender and cook more quickly than Kale and Collards, and the flavor is quite comparable.
You will also find Red Kuri Squash in shares this week, and I cannot rave more about it! Kuri Squash is part of the Hubbard Squash family and looks a bit like a pumpkin, but I prefer the flavor much more! Kuri Squash has a thin, hard, inedible skin, with firm, creamy, chestunt-y flavored flesh. It is filled with Vitamin A, C, Beta-Carotene, Potassium, and Iron and is a fabulous source of dietary fiber. I love to substitute this squash for pumpkin in a variety of recipes – particularly pie and soup. Below are a couple of my favorites:
