2018 CSA Week 17

Hello CSA Members!

Although it still feels like summer around the Farm, this past week we have spent time harvesting a variety of different winter squash varieties and preparing them for storage. I’m so excited to be sharing one of my personal favorite kinds of winter squash with you this week, Acorn Squash! Acorn Squash has a nutty, toasty flavor and a rich, buttery texture, and is incredibly easy to prepare. I prefer a savory style squash, so I usually prepare mine without sugar. I half it, scoop out the seeds, rub each half with olive oil, salt, and pepper, and place face down on a baking sheet at 400Β°F for 30 – 45 minutes. I’ll pierce the squash in several places with a fork about 20 minutes into cooking. Some folks prefer a sweeter versionβ€”try this one from A Sweet Pea Chef.

Also in shares this week is bulb fennel. Several years ago, I was one of those veggie lovers who didn’t particularly understand all the fuss about fennel. Eating it raw reminded me too much of black licorice, which I wasn’t a big fan of. It wasn’t until one of my coworkers made a delicious dish of roasted, caramelized fennel that my mind was changed. The flavor of the fennel became mild and sweet and paired so well with roasted tomatoes, Haddock, and a glass of white wine – try a Spanish AlbariΓ±o, RΓ­as Baixas – it’s fantastic. I couldn’t recommend it more. Since my initial fennel aversion, I have tried this vegetable a number of different ways and love the versatility of its flavor. My go-to is this recipe by Jamie Oliver.

But there are so many other fun ways to cook it too! Try it with, Willowsford Garlic, Shallots, Tomatoes, Acorn Squash, AND Sausage to bring the whole meal full circle. There is definitely something special about a meal cooked only with farm fresh ingredients πŸ™‚
