Chicken Wings

At the Stand

Look for meaty chicken wings. The skin should be creamy or yellow, depending on the bird’s diet, and smooth, not translucent or grey, which is a telltale sign of age. Fresh chicken has no odor. Sometimes there can be a faint smell when you first open the package because oxidation occurred. But it should fade after a few minutes, if not, don’t use the wings.

How to Store

Store chicken wings in the coldest part of your refrigerator. They’ll keep for two days uncooked and three days cooked.

Easy Preparations

People have the misconception that chicken wings are best fried. Actually, chicken wings are just as finger-licking good grilled, broiled or roasted. And these cooking methods are all far easier and less messy for the home chef. The key is a good marinade or sauce, preferably both. Also, always serve chicken wings piping hot.
