While it’s made from fermented milk, it’s easier to digest than milk. What’s more, it helps keep your intestinal system populated with “good” bacteria, which is beneficial for your health.

Choose yogurt made with milk from cows not treated with artificial growth hormones, commonly known as rBST or rBGH. Grass-fed cows produce sweeter milk. Jersey cows are prized most of all. You’ll taste the difference.

Store yogurt in the refrigerator and the follow the sell-by date, which is only a couple of weeks. It might last a few days after that, but in general artisanal yogurt is highly perishable. Once it’s open, yogurt will keep for about a week in the fridge.

Yogurt is so versatile. For starters, it’s delicious for breakfast served with sliced, fresh fruit or mixed with granola. Yogurt’s tangy flavor has a role in cuisines around the globe. It can be served hot or cold. It works in sweet and savory dishes. Use yogurt as the foundation for dips, soups, curries, smoothies, marinades, even salad dressings.  Try yogurt as a lower calorie alternative to butter in baked goods. Artisanal yogurts are so lush they can stand in for sour cream.
