I love how versatile sweet potatoes are. They are just as delicious in a spicy dish as they are teamed with butter and maple syrup. Their rich color is a giveaway that they are super nutritious. Sweet potatoes are packed with calcium, potassium, vitamins A and C, and disease-fighting antioxidants.
At the Stand
Look for firm, medium-sized sweet potatoes with tapered ends. Avoid sweet potatoes with bruises or that have withered. There are lots of interesting heirloom sweet potatoes to try these days, along with classic varieties like Beauregard, Garnet and Jewel.
How to Store
They may look hardy, but sweet potatoes are actually quite delicate. Handle them carefully. Store sweet potatoes in a cool, dark place. Plan to use them within a week. Scrub well just before cooking.
One of life’s simple pleasures is a baked sweet potato. They also taste yummy mashed and seasoned, in a medley of roasted autumn vegetables or thrown on the grill. Pureed sweet potatoes are wonderful in pies and custards. And don’t forget sweet potato fries!
