The pork from Mount Vernon Farm is the best I’ve ever had. The meat cooks up so juicy and tender – it needs little seasoning. Mount Vernon Farm is in the foothills of the Shenandoah Mountains. The same family has owned it for over 200 years. The Millers’ pigs graze in pastures, woods, even the apple orchard. I think that’s why the meat is so flavorful.
at the stand
Look for pork that is pale pink with white fat and bones. If the flesh and bones are darker or there is blood in the package it means that the meat is on the older side.
how to store
Pork will keep for two days in the coldest part of your refrigerator. You can freeze it wrapped airtight for three to six months.
easy preparation
Pork is delicious grilled, roasted, barbecued or brined. Slowly braising tougher cuts like short ribs and shanks produces wonderfully succulent results. Pork is one of the few meats that pairs well with cooked fruit. When peaches are in season, I love to serve grilled pork chops with grilled peaches. In the fall, pork and apples are a classic combination. And pork chops seasoned with a spicy rub is a quick, tasty, mid-week supper any time of year.
